Beet Kvass Probiotic Drink

So following from the previous probiotic focuses, I wanted to try a recipe I’d read online and tried at the Vegan festival called Beet Kvass. Now this tasted to me like a light sort of beetroot juice mixed with beer? I quite like Kambucha and it’s not as strong as that, but I thought let’s give it a go.

Ingredients 

  • Raw Beet (2-4)

  • Salt (2 tbsp)

  • Juice from sauerkraut (1 tbsp)

  • Filtered Water

So this is an Eastern European thing and they either use brown bread as the base, and it gives more of a beer flavor, or they use beets. So I chose beets for the colour and I think it was a very cool experiment. You dice up the beets, you can get rid of the skin for ease. You need to cut them into small cubes, so no grating just chunky cubes.

Grab your pickling jar or whatever you’re using that can be sealed up, and add the beets to the base. Add some of the probiotic strain you’re starting with, juice from sauerkraut is fine. Also you add your salt. Fill your jar up with the filtered water and cover with a sealent. It takes about 3 days to properly ferment and go fizzy, and you have a home made probiotic drink! You just filter the gunk out and serve from your fridge. I got a bit carried away and I added star anise and some peppercorns, I’d leave these out as I think it got in the way haha.
