Chewy Gooey Cookies

Hey guys!

I wanted to show my classic cookie dough recipe that is the fool proof way to get the most amazing chewy cookies. They’re easily veganised so check them out with my niecey here. We wanted to add rainbows to celebrate the efforts of the NHS because in a family home, bed time coincides with the moment of gratitude everyone is sharing so we’re saying thank you in other ways aha!

Ingredients

  • 150g White Flour

  • 1 tsp Baking Powder

  • 100g Sunflower Butter

  • 100g Brown Sugar

  • 1 tsp Vanilla Extract

  • 1 tbsp Golden Syrup

  • 60g Decorations or Filings of your choice!

  • 1 tbsp Vegetable oil for greasing

Cooking Time

10-12 Minutes (180 degrees, middle shelf)

The amazing people at Veganuary asked me to do a live video where I could make some of these easy cookies, and I think they are the simplest thing in the world so I was more than happy to oblige.

You start off by creaming the sugar and the fat, it’s as simple as that. Mix together in a bowl until it’s properly creamed together. Add your syrup and vanilla extract, or you could alternative this for something like an orange essence or a lemon, it’s up to you. I used melted dark chocolate for one of the recipes and it came out delicious! Next, divide your flour into two portions, 75g each. Add a tsp of baking powder to one half and then add that to the sugar and fat.

We then choose our ingredients! I tried pistachio and vegan white chocolate, this was made of cacao butter and was simple to do, recipe coming next. I also tried some cherry chewy sweets and it went a bit wrong as they melted into more of a coffee, which was actually delicious but not as great to look at as I thought it would be. My niece wanted to try raisins and we used coconut sugar, which is a bit better for kids and you can also substitute your flour mix, for 50g cocoa or cacao, to 100g flour and you get double chocolate which is amazing.

Once the fillings you’ve chosen are coated in the second half of flour, you can combine the two. You just mix them all together and you should be left with a gooey mixture that can be rolled into little balls without falling apart too much, if it’s too sticky add a couple of spoons of flour but you should be fine with this recipe, it’s foolproof. Grease your baking tray and set the oven up for 180, pop about 12 balls on to a couple of trays and bake for 10 minutes, check if they’re to your taste, and take them out. Set aside wait about 20 minutes to cool and set.

I made some chocolate and orange with candied orange peel, you can use your leftover peel, scrape out the pith and then chop up, add to some sugar and white and coat with caster sugar and you’ve made something fabulous out of leftovers too!
