Super Kale and Cauliflower Bake

I hope you are all doing well. I was thinking about creating a new baked dish which reminded me of a meal I had one time at the Ivy in London, it was a cauliflower cheese that I was eating in a period I wasn’t being so strict with the non dairy food and it was absolutely delicious. I then thought again about a keto-ish meal I grabbed on my way to Paris which was a cauliflower kale bake, and for the winter this variation would be phenomenal one to recommend. It’s a mixture between a cauliflower cheese, a pasta bake but is super low in carbs. The trick is grating the cauliflower so the texture is totally different to what you expect!

Ingredients

  • 1 cup Quorn Protein

  • 1 small Cauliflower (grated)

  • Half a bag of Kale

  • Mustard

  • 1 cup Bread Crumbs (and more for topping)

  • Good Karma Parmesan

  • Violife melted cheese

  • Cheese Sauce (recipe here)

So as you can see it’s totally a simple arrangement, I used some left over cheese sauce I made which has been a favourite on my website. Definitely the most easy and tangy, tasty, cheesey sauce that can be adapted to pasta dishes, baked dishes and more. I added truffle to this one to give it some depth and it was a win.

So this is relatively simple, you just fry off the quorn pieces til they’re cooked, in salt, pepper and mustard seeds. Mustard goes so well with cheese dishes and I used a french mustard, the bright neon yellow one is too much for this. Adding to my cooked quorn pieces I added a grated cauliflower and slowly folded into the dish, it’s absolutely insane when you add this texture cauliflower as the whole texture of the dish changes and it’s very melt in the mouth.

Then I added some destalked, very finely chopped up kale which I love to add to these types of dishes to give some extra iron, some chewy texture and some colour. I then added the Good Karma parmesan to the dish and some of my left over cheese sauce, around one cup. I combined, layered in a baking dish and topped with grated cheese from Violife and bread crumbs.

I popped it into the oven at 180 degrees c for 30 minutes and then finished it under the grill til it was crispy, it’s such a delicious bake and is super Keto friendly, so try it out and let me know what you think. You can leave out the kale and the chicken and just do a really delicious melt in the mouth cauliflower cheese in smaller ramekins, they go amazing at parties.
