Beef Mince Alternative - Linda McCartney Vege Mince

Hey guys!

I wanted to give you a new version of a meatball recipe with some added extras, because for Veganuary 2021 I got the amazing opportunity to be in the campaign. My idea was to put together a series of mini recommendation recipes that don’t share a full ingredient list but give tips on what products I like to use as alternatives and what flavours I like to add a meaty flavour.

For this one, I am using a mix of mushrooms and Vegemince by Linda McCartney because I think the texture and flavours are more firm and go together a bit better when you’re making things like a meatball or a burger patty. They have a combo of like the squeaky texture of meat, which gives more of a hold when you’re cooking them and then the flavours of mushrooms. So it’s basically a mix of onion, mushroom, chives, thyme, golden breadcrumbs, chickpea flour and water. You just fry everything until they’re soft, the flavours are there and then roll them into little balls. Then in a fresh pan, brown them on all sides and you can either eat cold, wait to cool and reheat in the oven, or serve in another type of dish. I chose to do a potato bravas dish which I love, it’s like roast potatoes with a garlicky, tomato sauce and olives.

For the sauce recipe, you basically have to create two other parts to this which, so that’s the sauce which is a tomato buttery garlicky richness. That involves frying off some delicious tomatoes, garlic, olive oil on one side to create a blended sauce, then the other side of it is to roast some vegetables, so I prepped some olives, sliced bell peppers, parboiled potatoes and in a baking trey roasted them all together for about 35 minutes. The final dish is basically everything put together, with the meatballs, in the sauce, and you can serve with some fresh shives or some vegan sour cream. It is so amazing and very carbalicious but can go as a side to a Spanish style tapas meal or as a hearty main.
