Vegan KFC Alternative

So I mentioned a little bit more detail about this one in my Veganuary blog here. Check that out first

Ingredients 

  • Chia Seeds

  • Plant Milk

  • Flour

  • Bread crumbs (Pre bought is fine, or use stale bread that you toast and them crumble up with your fingers)

  • Cauliflower

  • Salt

  • Pepper

  • Anything you wanna add to the mix

So the first thing is to grab a cauliflower. All you need to do is literally wash the cauliflower, chop up the stems into bite sized chunks. Boil them for about seven minutes. Drain and let cool.

In an easy to clean space, as this get’s messy, set up a series of bowls. You want to have about two cups of plant milk, a large dessert spoon of chia seeds. Let that mix-up and settle for at least twenty five minutes because you want the consistency to replicate what an egg does. It needs a little time to mix, you can use chickpea flour as it also works. You need about two cups of flour. Two cups of breadcrumbs, I think mixing breadcrumbs is the best and if you get Panko which is super crispy, mix it up with some stale toasted bread you just crush up with your fingers, the texture is insane.

Dip the cauliflower into the flour, then into the egg replacement, then into the breadcrumbs. Repeat that again, so twice, Lay on a greased baking tray and cook for about 25 minutes. If you’ve used larger cauliflower bites, try 30 and test to see if you get much resistance when you use a fork to slide into a nugget.

They are so amazing with hot sauce, but I mixed up an insane coffee BBQ which is coming in Issue Three. Way better than the KFC one and you can use any vegetable or protein replacement. Let me know how you get on!
