Chicken and Bacon Alternative - Vivera Chicken and Plant Pioneers

I wanted to give you a recipe for some awesome truffle sauce, some like weird shallots and just an alternative to a plant based roast than what I had on here. But I hated the photos of them, and even though it tasted delicious, I’m going to skip talking about the sauce and focus on the plant based meat alternatives that I’ve been adding.

The concept for this meal was a pesto and cheese stuffed chicken piece, wrapped in bacon. So straight forward, gorgeous and not what you would imagine as a vegan thing. But it’s not too hard, because now we have some fantastic ingredients that do the job. The brands I used were Vivera, who create plant steaks. I don’t know what meat they resemble or are in place of, they kind of reminded me of a brain. Then I grabbed the plant pioneers smoky rashers, which I wanted to crisp and wrap up. These were the two most recommended to me and I thought to be honest, it was gonna be more meaty than they were. They were actually fine, they tasted pretty delicious.

So the recipe is easy, you just need some vegan cheese, pesto, seasoning. I mixed it up, stuffed it between the two steaks, and then wrapped with the bacon. Use some soaked cocktail sticks to stop them burning when cooking. But super easy. I cooked them in a wrap of foil for 30 minutes. The bacon went more biscuity than other alternatives, it was more of a crisp and the flavour was great. The steak reminded me of Beyond Meat burgers in a way, if you guys have tried those within take outs last Veganuary as they were so popular? It was similar to that, I think you could probably do better with this if you pan fried it first to give it more of a meaty outer texture. I would definitely recommend.

I wanted this with some hassle back potatoes, truffle sauce and shallots and some cauliflower mash, so it’s not a super complex dinner but it’s really yummy and an alternative to just a classic British roast dinner. I will redo this properly and have some full info about the sauce as it’s INSANE. Very delicious. The
